Recipe: Banana Bran Muffins2 cup wheat bran1/2 cup sultanas1/2 cup wholemeal flour1 tbs baking powder1 tbs baking soda1 tbs cinnamon1/2 cup maple syrup1 cup milk1 tsp vanilla extract1 egg2 large bananas (mashed)Pre-heat oven to 180C. Grease muffin pan.Add bran and sultanas into a large bowl. Sift dry ingredients into the bowlMix wet ingredients into a jug and beat with a fork until well mixed. Add mashed bananas to mixed liquid. Combine well.Mix liquid to dry ingredients, and fold together until combined. Spoon even quantities into muffin pan.Bake at 180C for 20 minutes. Leave 2-3 minutes in tins before twisting and removing from pans.Enjoy!Danielle x |
