 Recipe: Banana Bran Muffins

2 cup wheat bran

1/2 cup sultanas

1/2 cup wholemeal flour

1 tbs baking powder

1 tbs baking soda

1 tbs cinnamon

1/2 cup maple syrup

1 cup milk

1 tsp vanilla extract

1 egg

2 large bananas (mashed)

Pre-heat oven to 180C.  Grease muffin pan.

Add bran and sultanas into a large bowl.  Sift dry ingredients into the bowl 

Mix wet ingredients into a jug and beat with a fork until well mixed. Add mashed bananas to mixed liquid.  Combine well. 

Mix liquid to dry ingredients, and fold together until combined.  Spoon even quantities into muffin pan.

Bake at 180C for 20 minutes.  Leave 2-3 minutes in tins before twisting and removing from pans.
